Polin Industrial Line designs, manufactures, installs and supplies know-how for production plant of deposited and wire-cut cookies on any capacity up to 1.500 kg/h and more. The lines comprises Planetary mixers, Dough feeding systems, Wire-cutter or combined Depositor and Wire-cutter, at single or double head for two colour dough, and with the possibility of fitting a third head for filling or a shutter system to close up the filled products. Baking ovens (Cyclothermic, Convection or Hybrid), Cooling conveyors and final Packaging conveyor.
The range of Depositors is complete of several models depending on their configurations with width from 800 to 1.500 mm:

Reciprocating moving head Depositor for deposited or wire-cut one color cookies and soft centre cookies, with the addition of one hopper for the filling.
Depositing head consisting of a hopper with a pair of grooved feeding rollers that leads the dough to the individual positive displacement pumps, one for each outlet, at constant pressure, allowing a very accurate dosing, without any variation in weight and volume of the product.
The machine can work as Depositor, with vertical and horizontal motion of the head to follow the baking belt and avoiding product tails, as Wire-cutter, with head fixed over the baking belt, dough feeding by means of the pump system, cutting of the product by means of a wire fitted on a oscillating frame to feed a row of products at a time on the baking belt, as Continuous Extruder, with fixed head, feeding rollers and pumps rotating continuously giving one set of dough lanes to be cut by a guillotine before or after baking depending on the product

The machine complete with a third hopper, basically for liquid or semi-liquid products, can produce a wide range of biscuits and cookies from traditional ones to more sophisticated, using different colours dough and fillings.
The hoppers of depositors are automatically fed by means of suitable Lifter and tiltersof Planetary mixer or Twin twist mixer bowl. On the limited volume hoppers of Depositor is recommended to fit a roller over-hopper to increase the feeding in automatic way and to keep constant and uniform the levels of the hoppers.

CYCLOTHERMIC AND CONVECTION
An hybrid oven is combining the most appropriate het transfer method on each stage of the baking process of cookies.
The Cyclothermic is the more flexible oven and suitable for many necessities. In this indirect oven the combustion products pass inside tube bundles without coming in contact with the product. Heat exchange is basically by radiation (due to the difference between the walls of the tibes and the product) and in small part by natural convection (air laps against the tubes, heats up and transmits heat to the product) This radiant bake gives gentle texture and distinctive characteristics on the surface of the product.
Another improvement of baking quality is achieved adding in the final part of the oven a Convection oven section, with recirculation of clean hot air inside the baking chamber (turbulence). This configuration gives the possibility of handling with better efficiency and flexibility two of the more important parameters: final humidity rate of the product and the even bake on sides and top and bottom of the product. The final humidity rate is ensuring an excellent “shelf life”, while the even bake is giving an aspect absolutely equal and agreeable on the full surface.
In particular cases the oven could be fully cyclothermic.
